Regalis Black Truffle Balsamic Glaze
At eighteen years old, this balsamic is concentrated into a naturally (stablizer-free) thick luscious nectar.
From Modena Italy, the great homeland of aceto di balsamico, it's been infused with black winter truffles (‘perigord”). The tiniest amount makes an astonishingly delicious and complex impact on your tastebuds.
A little goes a long long way, which is good since this bottle is stable once opened.
When I tasted this the first time, I immediately remembered Staffan Terje of Perbacco plating short ribs for me and drizzling the tiniest amount of thick balsamic vinegar on the tender meat. This truffle-infused balsamic glaze is perfect used this way. Just a few drops is heaven. It’s been heaven dotted onto duck, grilled vegetables, burrata cheese, and strawberries of course.
